European cheese n’ scones!

So I have this friend Cathy…this time, I’m not talking bout myself! She is a food blogger and is a published author–yay!!!! This entry is inspired by her 🙂 Read her HERE:)

So my roommates like cheese like almost all who live in Europe. I like health myself but yes, good food is guuuddd! They give me champagne, red wine, and macarons and I feed them veggies..who is really getting the better deal here??!!!!

Anyway, for the past couple weekends, we have a cheese plate/charcuterie/market lunch–in their land, JAM = fruit! Yikes!!! So I am showing them how to combine taste buds with health.

When I make dinner, there are at least SEVEN, count ’em S-E-V-E-N fruits n veg on the plates….I can’t believe it, but H can make pasta sans veg!!!!!!!??!!!!

Anyway, back to the scones….we have leftover cheese after these lunches and they’re delicious. This week, we had:

–strong blue cheese
–a remnant of chevre
–truffle brie, H’s fave
–a new peppercorn cheese —> really yums..if I were the other Cathy, I would have the regions of these cheeses but alas, you guys know me NOT her!

and there’s always parmigiano and another pasta topper in the house….

I was planning to make fruit scones to incorporate more into their lives. BUTTTTT we ran outta berries and they are freakin’ $$$ here and then I saw the cheese and thought: DUH! Let’s do this!

SO FAR I AM DOING A TERRIBLE JOB OF IMITATING MY FRIEND CATHY. SHE FOCUSES ON FOOD AND WHAT SHE EATS. I HARDLY HAVE A FOCUS!

The Internet is my recipe book. I used this one today. Just looked up “fancy” cheese scones and voila!

And seriously, with a bake time of 7 minutes!!!! WTF? (= wow that’s fantastic!) HOW can one go wrong? You can’t! SCONES R DEAD EASY! Like 5 ingredients that’s all…no eggs and really not much butter! Can’t get better than that!

Sooo you say you can’t cook/bake? U can!

I’m used to working in a “ghetto kitchen” since I didn’t really have top-of-the-line equipment in tropic VN but alas all can be done without measuring spoons. (I have used yogurt containers in the past!) but today I had to eyeball everything since my friends don’t bake! OH WELL IT ROCKED I THINK?

So would you eat the apple cheese ones or the straight up cheese ones. The big ones are brie-blue cheese and the small ones are the apple-peppercorn-parm-chevre mix.

And I just got hungary once I was done! SCORE!!!!
